dc.description.abstractInsulin resistance (IR) reduces glucose uptake and leads to elevated glucose levels (EGL). Foods that limit postprandial glycemic response (PPGR) and exercising can help limit these EGL. 25 subjects consumed 6 different types of tortillas. Bean or nopal flour was added to corn flour tortillas to determine if these ingredients mitigated the glycemic response. We also investigated if individuals meeting the Center for Disease Controls' (CDC) physical activity (PA) recommendations had lower IR and if that influenced the PPGR. PPGR to different types of tortillas was measured for 3 hours. Participants also completed a physical activity questionnaire to determine PA levels. We found that substituting bean or nopal for corn in a tortilla did not reduce glycemic response. It was also found that those who met CDCs' recommendations had lower IR compared to those who did not and that this did significantly affect PPGR to 100% corn flour tortillas.
