Abstract
Broadcast Transcript: From the "Certification Mania in Japan" files comes this recent report: Tokyo is launching a campaign to "crack down" on those restaurants on foreign soil that bill themselves as Japanese but don't quite cut the wasabi when it comes to food preparation and traditions. To fix this, there are plans to create a program in which restaurants could apply for certification in Japanese culinary authenticity. Presumably a trained professional would visit the site and, based on careful observation, grant or deny the certificate--suitable for framing. What becomes of restaurants that fail to qualify? One would hope remedial classes in slicing raw tuna, reviews of sticky rice technique, and, like the bar exam, the chance to take it again and again until you pass. #ceas #hacker #japan #tsutsui
